Whether you’re slinging cheese boats or assembling full grazing boards, we’ve got real-world, tested advice to help you thrive.

Now that we’ve covered the basics, let’s dive into the hands-on strategies that will help you set up a visually stunning outdoor charcuterie booth—and actually sell out every time.

Ditch the Samples? Maybe!

One of the first questions we always get is: “Do you offer samples?” And the answer? Not necessarily.

When you’re working with cheese, meats, and other perishables in the hot sun, samples can become more of a liability than an asset. Instead of fighting nature, we opt for a big, beautiful image of our product that draws people in. If you can take a professional photo beforehand and blow it up for display, do it. Let the visuals do the work.

Plus, remember this: your customers will become walking billboards. When people see others enjoying their curated boards, curiosity does the rest. And most folks already know what cheese tastes like—samples may not move the needle the way you think.

Don’t Underestimate a Good Sign

Don’t Underestimate a Good Sign

Let’s talk signage. A sandwich board (also known as an A-frame) can be a game-changer. We’re big fans of placing a sturdy, attention-grabbing sign right in front of the booth—arrows, product names, pricing, and all. But make sure it’s weighted. Seriously. We’ve seen signs blow halfway across a parking lot. We actually use heavy reclaimed wood from old kitchen cabinets (shout-out to resourceful spouses everywhere). It’s wind-proof and indestructible.

Before you bring it, double-check your event’s rules—some won’t allow signage in the aisles due to space or safety. But when permitted, a visible, clean A-frame helps foot traffic find you and piques curiosity from afar.

Pricing with Confidence (and Profit)

Pricing with Confidence (and Profit)

Here’s the truth: figuring out what to charge isn’t just about ingredients. It’s about everything—booth fees, your time, supplies, packaging, utensils, napkins, the whole experience. If you're wondering how to price confidently, we've got you. We recommend using a charcuterie calculator (yep, we’ve built a free one—thanks to our genius programmer brother!). It’s designed to make sure you're not just covering costs but actually making money.

As a rule of thumb, we aim for the cost of goods to be 10% of our final price when vending. That means if it costs you $3 to make, you should sell it for at least $30—because you’ve got to factor in time, fees, labor, and yes, paying yourself.

And please, don’t price yourself too low just because you're new. We once saw someone selling charcuterie boats for $6—at a $200 event. Her setup was messy, her pricing unsustainable, and unfortunately, she didn’t make her money back. Learn from that: value your work, and customers will too.

Professional Presentation Matters

Document Everything

People eat with their eyes first. That’s not just a saying—it’s a fact. So your setup? It needs to look clean, intentional, and inviting. No clutter. No food sitting on the ground. Keep your space neat and organized, and you’ll instantly earn trust from passersby.

And yes, dress the part! We usually wear either our short-sleeved chef coats or branded t-shirts with fun, bold colors (hot pink, anyone?). Pair it with a nice apron, pull your hair back, and skip the ball cap unless you’re in a full outdoor kitchen. It’s all about looking put-together and food-safe.

Document Everything (Seriously)

Don’t forget to take all the photos. Behind the scenes. Final product. Customers smiling. Your booth setup. These are gold for your social media, website, and marketing. If you can, post in real-time while you’re at the event—it helps generate buzz and keeps your brand top-of-mind.

And if you have a good interaction? Ask for a review. Google reviews are pure currency in today’s small business world. Every bit of feedback helps you grow and reach more of your ideal customers.

Final Words: Start Small, Think Big

If you're nervous, don’t worry—everyone starts somewhere. Start small, get one event under your belt, and grow from there. There’s no need to launch with a giant setup or a full menu. Focus on one solid offering, perfect your setup, and go from there.

We’re building tools to help you succeed every step of the way. Look for our Curated Catering Supply List and Market Vendor Checklist in the show notes below. And if you haven’t yet, grab our free charcuterie calculator to make sure your pricing is on point.

If you're ready to grow or launch your food-based business—from cheese carts to grazing tables—we're here to help at grazingbiz.com. This is what we live and breathe, and we’d love to be part of your journey.
