When we first started talking with other food entrepreneurs about charcuterie carts, one thing was clear: people are curious but also a little overwhelmed. Do we really need permits? Can we prep at home? Is it worth it financially? We’ve been through these questions ourselves—and with dozens of people in our community—so let’s break it all down together.

What Exactly Is a Charcuterie Cart?

what exactly is a charcuterie cart?

Think of a charcuterie cart like a coffee cart, only way prettier and a lot tastier. Instead of hot dogs or lattes, we’re rolling up with cheeses, meats, olives, fruit, and all the delicious bites people love about boards and grazing tables.

The difference? A cart is interactive. We (or someone from our team) stand behind it, ready with tongs, serving guests one at a time. It’s part food service, part performance, and that’s what makes it so fun.

Unlike a board that’s prepped in advance and delivered in a box, a cart lets us build small plates or cones on demand. Guests love the experience—and hosts love the wow factor.

Private Events vs. Public Events

Here’s where things get interesting. Running a cart at a wedding or private event looks very different from setting up at a farmers market or community fair.

  • Private Events: We usually charge per head (often $20–25/person), plus a setup or staffing fee. This covers the food, the prep, and the time we spend on site serving. Hosts pay us in advance, so we know exactly how many people we’re feeding and how long we’ll be there.

  • Public Events: Here, we’re more like traditional vendors. We pay a booth or cart fee to be there, and then we sell each portion individually. That means we need a payment system on site (card reader + cash backup) and a plan to keep the line moving. Public events can be unpredictable, but they’re a great way to reach new customers.

Both options can be profitable, but each comes with different requirements—especially when it comes to food laws.

Cottage Laws, Permits, and Prepping Rules

Every state, county, and sometimes even city has its own cottage food laws. These rules decide what we can make at home, how it needs to be labeled, and where we’re allowed to sell it.

Most cottage laws allow breads, cookies, cakes without buttercream, and other shelf-stable items. Charcuterie, however, often falls into a different category because we’re dealing with perishable foods. That means:

  • For private events, we may be allowed to prep at home (if our state and local laws say so). We cut, package, and bring everything labeled and ready.

  • For public events, we usually need a special event food permit, and most areas require us to prep everything on site. That means buying our cheese and meats fresh, transporting them safely, and assembling portions at the market or fair.

It sounds strict, but these rules are in place to protect both us and our customers. And truthfully, once we understand them, they’re not as intimidating as they seem.

Profitability and Strategy

So, is it worth it? Absolutely—if we approach it strategically.

  • Private events give us stability, with guaranteed pay and controlled guest counts.

  • Public events give us exposure, helping us grow our brand and connect with new customers.

We can choose one path or do both, depending on what fits our lifestyle and goals. The beauty of this business is its flexibility.

starting a charcuterie cart business

Starting a charcuterie cart business isn’t as simple as rolling up with a pretty display. We have to

consider cottage laws, food handling permits, prep requirements, and event strategies. But when we put those pieces together, the cart becomes an incredible way to serve, connect, and profit in the food business world.

If you’ve been dreaming about it, we say: do the research, know your local laws, and then go for it. The demand is out there—and people can’t wait to be wowed by your cart.
